Every order handed along, every handoff written down.

On a busy night a takeout kitchen runs on shouting. Orders get retyped, allergy notes get lost between the screen and the line, and a price question stops the chef mid-service. Follow one order through Saffron Lane Kitchen and see who passes what to whom.

Saffron Lane Kitchen is fictional. The work it does is not.

A busy restaurant kitchen at service, with a chef plating a dish at the pass

Five handoffs, mostly by voice.

This is a typical busy-night takeout order. Nobody is doing it wrong. There are just too many small steps between the order and the bag, and each one waits on a person who is also doing something else.

Order 1047, Saffron Lane Kitchen

CustomerCustomer6:42 PM

A pickup order comes in

Two dishes ordered online for pickup at 7:15. The note on the order says: no peanuts, severe allergy.

The same order, as text

  1. 6:42 PM

Customer: A pickup order comes in. Two dishes ordered online for pickup at 7:15. The note on the order says: no peanuts, severe allergy.

  2. 6:42 PM

Order Manager (AI worker): Queues the order, keeps the allergy note. It puts the order in the pickup queue as number 1047 and copies the allergy note onto the ticket word for word, so the note travels with every handoff.

  3. 6:43 PM

Chef (AI worker): Sequences the cook line. The lamb curry takes longest, so it goes on first. The paneer bowl follows so both finish together around 7:10. The allergy note is pinned to the top of the line ticket.

  4. 6:44 PM

Chef (AI worker): Holds a price that is off the menu. The lamb curry rings up at $11, three dollars under the menu price. Prices are not a worker’s call, so the Chef holds that line and asks the manager. Cooking carries on. Only the charge waits.

  5. 6:47 PM

Manager (person): The manager approves the special. The question reaches the manager’s phone with the item and both prices. It is the Tuesday special, so one tap clears the hold. Approved by manager · 6:47 PM.

  6. 7:08 PM

Cashier (AI worker): Texts that the order is ready. When the cook line marks the order done, the Cashier sends one short text with the approved total. It repeats the allergy note so the bag gets checked at the counter.

  7. 10:30 PM

Owner (person): Reads the summary at close. Every handoff from the evening sits in one log, in order, with who did it. The owner can see the one price that was held and who approved it. Nothing changed without a person.

Always a person

What a person always does here.

Workers pass information quickly and exactly. These calls stay with people, and the workers are built so they cannot make them.

  • Sets and changes prices

A worker can spot a price that looks wrong. Only the manager decides whether it stands.

  • Approves comps and refunds

Money going back to a customer is a person’s decision, every time.

  • Answers an allergy question the note does not cover

The worker carries the note faithfully. If a customer asks something new about ingredients, a person in the kitchen answers.

Three workers, each beside one person.
